How to Make Nachos Healthier?!

We all love a good take on nachos, they are just one of those meals that we all can't seem to get enough of! Theres just something so comforting about dipping the mince the gac and the cheese with some corn chips am I right?!


Here is my recipe on how to ditch the original corn chips to make this dish healthier and full of more nutrients.


Nachos

INGREDIENTS:


- 1½ large round sweet potatoes

- Premium Lean Beef or chicken mince (500g approx for 4) or if you are meat free use 1 can of mixed beans instead

- ½ a can of black beans

- 1 Red onion

- 1-2 large cloves of garlic

- 1 Spring onion

- 1 Can of chopped tomatoes

- 1 tspn Cumin

- ½ tspn Chilli powder

- 1 tspn of edam cheese (optional) if you are dairy free swap the cheese for nutritional yeast.

- 1/2 Avocado


HOW TO:


1. Slice the orange potatoes into to round circles, place on a baking tray (separate from one another) season with Himalayan pink salt and pepper and drizzle some coconut oil or oil olive over them.

2. Bake sweet potato for approx 15-18 minutes.

3. While sweet potato rounds are baking, in a pan cooking with coconut oil or olive oil place red onion, garlic and spring onion.

4. Once onion starts to soften add mince of choice, season with himalayan salt and pepper, cumin and chilli (just as much as you like, depending on your level of heat preference).

5. Cook mince until brown or white (depending on your protein) then add black beans and chopped tomatoes, mix and leave to simmer for 5-8 minutes.

6. Now that your mince mixture is cooked take sweet potato rounds out of the oven.

7. Spoon some of the mince mixture onto one of the sweet potato rounds (these are your “chips”) and sprinkle 1 tablespoon of grated per person cheese on top.

8. Bake in the oven for 5 minutes (until cheese has melted or grilled).

9. Top the nachos with some smashed avocado (avocado mashed with a little bit of salt and lemon)

10. Serve with some greens such as spinach if you wish (see below) .





-Serves 4 people approximately
