Ingredients

Meatballs

  • 500g beef mince

  • 4 garlic cloves, minced

  • ¼ cup shallots, finely diced

  • 2 tsp oregano

  • 120g ricotta

  • 1 egg

  • 50g breadcrumbs

  • 20g Parmesan cheese

  • 150g grated courgette (well squeezed)

  • ½ tsp salt

  • ½ tsp cracked pepper

Sauce

  • 2 tbsp olive oil

  • 140g carrot, finely diced

  • 110g red onion, diced

  • 120g red capsicum, diced

  • 100g mushrooms, sliced or chopped

  • 2 tbsp tomato paste

  • 1 can chopped tomatoes

  • 1 can cannellini beans, drained and rinsed

  • 2 tsp oregano

  • salt and pepper to taste


How to Make Healthy Homemade Meatballs

Step 1: Make the meatballs

In a large bowl, combine:

  • beef mince

  • grated courgette

  • garlic

  • shallots

  • oregano

  • ricotta

  • egg

  • Parmesan

  • breadcrumbs

Season with salt and pepper and mix until just combined.

Roll into evenly sized meatballs.

Pro tip: Avoid overmixing as this can make meatballs tough.


Step 2: Brown the meatballs

Heat 1 tablespoon olive oil in a pan over medium heat.

Brown the meatballs on all sides until golden (they don’t need to be fully cooked through yet).

Set aside.


Step 3: Build the sauce

In the same pan, sauté onion, carrot, mushrooms and capsicum for 5–7 minutes until softened.

Stir through tomato paste, chopped tomatoes and oregano.

Add cannellini beans and season to taste.


Step 4: Simmer

Return meatballs to the pan.

Cover and bake in the oven for 15–20 minutes until fully cooked and the sauce thickens.


Step 5: Serve

Serve with:

  • pasta

  • roasted vegetables

  • steamed greens

  • mashed potatoes

  • quinoa

  • crusty sourdough

Top with fresh basil and Parmesan if desired.
